Looking for a healthy & simple way to use leftover chicken?
Today we made a curried chicken salad for a picnic lunch. Dice leftover chicken in a bowl. Add minced celery, tomatoes, a 1/2 an orange pepper and two green onions chopped. Add 1/4 cup mayo of your choice, 1tsp Chana masala mix, salt & pepper to taste.
I ate it on Ryvita cracker with lettuce and cucumber. So easy and so flavorful!
